Digestion of lactoferrin by gastric pepsin liberates the immune supporting peptide lactoferricin B. One of the biological activities of lactoferrin comes from its powerful ability to facilitate iron absorption. Jarrow’s lactoferrin is freeze dried to better preserve its delicate structure.
