Roasted Chili Enchilada Sauce
Ingredients:
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- 2 tbsp medium roasted red chili pepper
- 1 tbsp organic tomato paste
- 1 tsp organic cumin
- ½ tsp organic garlic powder
- ¼ tsp sea salt
- 1 ½ cups vegetable or chicken broth
Instructions:
- In a saucepan, heat olive oil over medium heat. Stir in flour to form a roux.
- Cook the roux for 1 minute, then add chili pepper, cumin, garlic powder, and tomato paste. Stir constantly for another 1–2 minutes.
- Gradually whisk in the broth until smooth.
- Simmer on low for 10–15 minutes, stirring occasionally until slightly thickened.
- Use in enchiladas, smothered burritos, or as a flavorful sauce base.
